In order to obtain these sought after results, in addition to the thinning and leaf-pulling procedures, the Lafage Estate employs the most recent technology, such as foliage analyses, field monitoring or high shoot positioning. Yet the old-fashioned methods, that impart grandeur to the estate’s wines, such as manual harvesting, late pruning or goblet-training techniques, are never neglected.
In other words: a healthy form of viticulture that respects the environment through a sound culture. « The vineyard at Le Vignon, for example, has been perfectly orientated and modelled to such an extent that our goals may be attained. The desired balance is one that requires only the minimal manual intervention necessary in order to apply the finishing touches. With this custom-built vineyard, we are aiming at 12 to 15 hectolitres per hectare and 15% vol. for our berries, from which will flow the Le Vignon-vintage » affirms Jean-Marc Lafage conscientiously. From these sculpted vines, trained toward excellence by skilful hands, originate the great wines of the Roussillon.
