Wine breeders: respecting the fruit
Œnologists by name and nature, Jean-Marc Lafage and Eliane Salinas-Lafage share their passion for the art of wine-making, a task that they accomplish ever so finely. Their leitmotiv: to breathe the fruit of the vine, to protect it, to preserve the freshness, as well as the intensity, that has been captured as it forms an integrative part of the various territories that harbour the estate. « We age our wines in barrels so they may gain in intricacy and smoothness. The barrel allows us to develop the wine through a managed oxidation, without brutality. Its purpose is to accompany the wine on its journey toward the expression of its fruity uniqueness, through a delightful bonding of delicate flavours and soft tannins.» reveals the Lafage-couple passionately.
Thus, the Lafage Estate produces a fifty-something new barrels of wine yearly. With a total of 250 barrels, they rotate the barrels every 4 years. The Lafage Estate produces their wine field by field. Each wine has a story and displays a strong identity, from controlled technology (cold maceration, gas, pre-fermentation blending, sorting table) to transmitted techniques (cap-punching, carbonic maceration). It is a rigorous and precise knowledge which is at the heart of these great Roussillon wines!
